what's for breakfast?

"What's for breakfast?" is my favorite question to ask John in the morning.  Mostly because I hate making decisions about things, but also because I usually wake up hungry!

Here are a few breakfasts we have enjoyed recently. 

Finnish Pancake

(here's the Finnish Pancake recipe, we used the strawberry rhubarb sauce that John's mom makes and already had on hand)

Eggs and avocado
This is also delicious thrown into a tortilla with some salsa.  

PB and Banana Pancake
PB & Banana Waffle
The pancake and waffle sandwiches are best eaten with a fork and knife and a little bit of maple syrup drizzled on top for good measure.  

We use Coach's Oats pancake mix for our pancakes and waffles.  We learned yesterday (when we had waffles) that in order to convert a pancake recipe into a waffle recipe, you need to add a bit more fat, approximately 1 Tbsp per cup of flour.  So in went some butter.  Yum.  Butter.  I added the fruit to counteract the butter...I'm sure it worked.
