Weekly Wrap Up | January 8, 2017
I'm trying out something new, a little weekly wrap up to make sure you have one place to go to keep up with all that's going on. I'll do a quick wrap up for what I ate/cooked, workouts, as well as some of the most popular stuff from my various social media channels. Let me know what you think in a comment!
Here's what happened last week:
I meal prepped for last week out of two of my most favorite cookbooks and another one that I haven't tried many recipes out of yet. It took me about 10 minutes. I mean, how can you complain that you don't have time to meal prep if it only takes 10 minutes? If you don't have these cookbooks yet, they are 100% worth it. I made the Greens & Beef Chili out of Fed + Fit, the Mediterranean Chicken and Thanksgiving meatballs from Practical Paleo and the Breakfast Cookies from Run Fast, Eat Slow. All were delicious and easy!
I also tested out a couple of new things from breakfast, one of them was cauliflower oats (sounds gross, tastes amazing). I think next time I do this I'll do them in the InstantPot because it will be much faster. It took a long time for the cauliflower to soften up on the stove.
Essential Oils Classes

Here's my workout summary for the week (currently in week 1 of base 1 for a half ironman triathlon):
- Swim - 1500 yds (0:45)
- Bike - 10 miles (0:50)
- Run - 7 miles (1:48)
Overall it was a pretty good week. I'm fighting some sort of illness, so my swimming volume (and speed) suffered. I only swam one day and that was a struggle. I felt like I couldn't breathe at all the whole time and didn't even really finish the workout.
Social Media Highlights
