Weekend Relaxation & An Update On Me


The last couple of weeks have been rough. After dropping out of my 50K race at mile 28 (race report coming at some point, but it was quite the saga), I ended up getting sick and I'm STILL not feeling all the way well. Yes, I've done all the witchy magic things to get rid of this sickness, but it just seems to be hanging on for dear life. I'm mildly terrified that I'm having yet another reactivated Epstein-Barr virus (EBV) infection because I have been so tired after my workouts which is EXACTLY what happened to me several years ago and no one could figure out what was wrong. 

I haven't talked much about EBV and chronic fatigue, but it's something that I have several posts planned about in the future. As I'm sitting here with a sore throat that has moved from one side to the other and is very obviously related to a giant, swollen lymph node, I'm trying really hard not to freak out about the fact that EBV has been linked to Hodgkin Lymphoma. I know better than to diagnose myself via the internet...but it's now one of those nagging things at the back of my brain. All that to say, I spent my weekend resting on the couch reading and watching the Olympics. 

Sunday Eats


My usual breakfast is some variation of meat, eggs, and veggies. Yesterday was not exception. Two slices of bacon, two fried eggs, and some sauteed cabbage.

And of course there was coffee. There's always coffee (although there might not be coffee soon...I'm considering some dietary changes that would eliminate coffee). For some reason I've been missing iced coffee, so even though there's definitely still snow on the ground, I enjoyed a glass of iced coffee.

Lunch was leftover ground beef and veggies with some leftover potatoes and a hefty scoop of kraut. I'll put kraut on almost anything.

For dinner I had some leftover pork with leeks and carrots over a few leftover roasted potatoes and topped with some fresh parsley and a little bit of Tessemae's Ranch Dressing (my absolute favorite). Yes, I used the same bowl that I ate my lunch out of.

I also managed to finish two books this weekend (I told you it was a weekend of rest). Both of which were good, but not great. I spent most of Sunday watching the Olympics from the couch (curling, speed skating, and biathlon) and considering whether it was too late in my life to start a speed skating career...
