What We're Eating: Week of Sept. 28


menu-sept-28 For some reason it's getting harder and harder for to make a menu. I feel like this happens every once in awhile and we end up eating out a lot. I'm really trying to avoid that since we are essentially living off of one income right now because of school (I'm working just enough to pay my bills).

Most of the recipes that I linked to are not the ones that I'm using...because I'm probably not using a recipe. Sometimes I find when I'm not super inspired to make a plan if I come up with a list of stuff that I can make without a recipe, I'll end up improvising and making something slightly different but tastier.

The chili recipe I linked to is very basic, which I like because then you can add whatever you want to it. I usually put bell peppers and sometimes a sweet potato in my chili. The stir fry on Wednesday is whatever is in the fridge that can be put into a pan and made into dinner.

Monday: Chicken fajitas

Tuesday: Chili

Wednesday: Stir fry

Thursday: Halibut

Friday: Leftovers

Saturday: Dinner out

Sunday: Sausage and veggies

Hopefully I'll be a little more inspired soon and making a menu will be easier. But for now I'll just stick with the basics so I don't have to put too much thought into it!
