I’ve yet to find a gluten-free bun that makes eating a burger as satisfying and delicious as before I went gluten free. Up until about six months ago I would have just eaten a gluteny bun with my burger, but since discovering I have dermatitis herpetiformis, that’s a definite no go unless I want a horribly itchy rash for months after. So instead I decided to make a burger dish that tastes like eating a burger, but without the expectation of it being exactly like a burger on a bun.

Enter the Bacon Burger Bowl.

One of the best parts about this dish is the dressing. Which is a little bit burger sauce and a little bit ranch dressing (trust me, it’s delicious).

These bowls have all the bits and pieces you love to put on your burger and are completely customizable to your tastes. Skip the pickles, add some sauteed onions and mushrooms, or sprinkle with some cheese if you eat dairy. If you need some more carbs, feel free to add some roasted potatoes or a side of sweet potato fries (which would also be delicious dipped in the dressing).

The dressing has a little bit of ketchup in it (skip it if you don’t like ketchup on your burger) and a slightly cheesy flavor from the nutritional yeast. If you don’t like or have nutritional yeast, this dressing will still be delicious without it!

Bacon Burger Bowls

Makes: 2-3 servings

Ingredients:
    Ranch Sauce
  • 2/3 cup mayonaise
  • 1 tablespoon ketchup
  • 2 teaspoons lemon juice
  • 2 teaspoons nutritional yeast
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 2 teaspoons dried chives
  • salt to taste

  • Burger Bowls
  • 6 slices bacon
  • 1 pound ground beef
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 2 dill pickles, sliced
  • 1 pint cherry tomatoes, sliced
  • 1 avocado, sliced
  • 1-2 hearts of romaine, chopped

Instructions:
  1. Combine all the ingredients for the sauce together and mix well. Taste and adjust seasoning if needed. Set aside.
  2. Add the bacon to a skillet and turn on to medium-high heat. Cook until bacon is cooked through and slightly crispy. Remove from skillet and drain.
  3. Add the ground beef to the hot skillet and brown. Break up with a spatula as it is cooking. Add the salt and garlic powder. Cook until no longer pink.
  4. To assemble the bowls, layer the lettuce with the beef mixture, bacon, tomatoes, avocado, and pickles.
  5. Top your burger bowls with ranch sauce and enjoy!
